Here's a lovely way to use up leftovers. That hides the fact that you're eating turkey. Again.
So, I did a little improv on this recipe from Oprah. Which is to say, I didn't measure anything, and I didn't worry about the exact ingredients. It was delish (though it might have needed more salt, and maybe some Tabasco). So, here's what I did:
Dice and boil a potato. Set it aside. Warm a large skillet with olive oil and butter. Dice an onion, and brown it in the oil. Drop in a few handfuls of flour and make a roux - all the flour should be absorbed in the oil; add more if you need it. As soon as all flour is absorbed, stir in chicken broth. Still to make sure the roux is evenly distributed. It should thicken almost immediately. Turn down the heat, add frozen vegetables (corn, peas, carrots) and the potato, plus diced white and dark turkey meat. Stir to combine, and remove from heat. Spoon into a small pie pan, and cover with pie crust. Put in to bake at 400 for 45 minutes.
YUM!!! I'm having it for lunch tomorrow.
